Rotisserie Turkey Biscuit Casserole & 40 Thanksgiving Leftovers Ideas

Aren’t Thanksgiving turkey leftovers just the best? Sometimes during the fall & winter, I will use my Ronco Rotisserie (on sale now!) to make a whole turkey just for the leftovers and meal planning. If you manage to have any turkey leftovers this Thanksgiving here is an easy twist on the traditional pot pie recipe to try. You may want to cook another rotisserie turkey just to make some of the 40 ideas listed below!

Leftover Rotisserie Turkey Biscuit Casserole

40 Thanksgiving Leftovers Ideas, rotisserie turkey

Ingredients

  • 3 cups shredded leftover turkey meat- any combo of light & dark
  • 3 tablespoons unsalted butter
  • 1 cup mixed frozen carrots & peas
  • 1 medium onion, finely chopped
  • 2 celery stalks, finely chopped
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1/3 cup half & half
  • ½ teaspoon dried thyme
  • pinch cayenne pepper
  • Salt and freshly ground pepper
  • 2 cans jumbo biscuits (you will need around 8 biscuits)

Instructions

  1. Preheat the oven to 425 degrees.
  2. In a large cast iron skillet, melt 4 tablespoons of the butter over medium-high heat. Add the frozen carrots & peas, onion, garlic and celery and sauté until onion is translucent.
  3. Lower the heat to medium; sprinkle the flour into the skillet and cook, stirring, for 1 minute.  Be careful to not over brown flour. Next stir in the chicken broth, bring to a simmer and cook, stirring until thickened for about 2 minutes. Now stir in half & half and simmer for 1 minute more. Remove the skillet from the heat, add dried thyme, cayenne pepper, salt and pepper to taste.
  4. Add shredded turkey into gravy mix. Stir to combine completely.
  5. Top turkey & gravy with raw canned biscuits. Bake until the biscuits are golden brown.
  6. Let Turkey & Biscuit Casserole cool slightly and serve warm.
